Wild game, crappy outcome, good food!

*SIGH* I’ve never really been a Patriots fan, but I was hoping that they would be successful at finishing up a perfect season! But MAN was that one hell of a game! I honestly thought the score would be much higher than it was! I did not even remotely expect the Patriots to score as low as they did! I’m sorry that the Patriots didn’t win, but, in my opinion, that is exactly how a Super Bowl game should go. Both teams played their butts off, both teams made some serious mistakes and both teams deserved to win. Ultimately it came down to which team played the better game.
I’m also going to give you a recipe that I should have posted before the game. Tonight I made my pocket sandwiches that I make often around here and they not only hit the spot food wise, they also turned out to be PERFECT Super Bowl finger food! So, here’s the “recipe”.
Canned Grands biscuits (I usually use the store brand, but they need to be the larger biscuits)
Thin sliced deli meat of our choice (cut into small pieces)
Shredded cheese of your choice
Toppings of your choice chopped small (i.e. onions, olives, jalapenos, banana peppers, etc.)
Roll the biscuits out on a non stick surface until they are about 4-6 inches across. You want them thin, but not too thin. Put some of the meat on half of the biscuit, add cheese and toppings and fold in half. Seal open edges with a fork and put on lined cookie sheet or baking tray. Bake at 350 degrees until biscuits are golden brown, remove from oven and serve.
These sandwiches are AWESOME as well as being cheap and easy to make. They also refrigerate and freeze well too, so you can make several at a time. The kids LOVE them in their school lunches! You can get really creative with them too! You can use pizza type ingredients and put a little bit of pizza sauce in before you fold and seal them. You can make them with PB&J, just be sure not to use much jelly if you plan on eating them right away because the jelly gets REALLY hot! You can also make them with pie fillings and/or puddings for a type of dessert. If you use pie fillings, sprinkle a little bit of sugar on the top before putting them in the oven and add some cinnamon to the sugar if you use apple filling. If you go with pudding, I like to roll them in powdered sugar.
But my biggest point is that they are super easy to make and if you’re on a tight budget, they’re REALLY inexpensive to make as well! The meat ones go REALLY good with soups, especially Tomato! I’m so sorry that I didn’t think to share this before now and if you do give them a try, please stop back and tell me what you thought of them!

I have always used canned biscuits to make “fried pies”. I make a simple glaze of powdered sugar, water and a little vanilla. Yummy. I also make donuts out of biscuits, just use a small biscuit cutter and fry them. Dang, now I’m hungry. LOL
Those sandwiches sound really good, and if I make them with pizza sauce, pepperoni, and cheese, even the husband might eat them!!

They are AWESOME! I made 32 of them yesterday so I’d be sure to have plenty left over and have warmed up a couple of them to eat today…LOL! My favorites are made with corned beef, chopped onions and green olives and shredded mozzarella cheese….MMMMMMM!!! But they’re just as awesome with pepperoni. Another good combo is corned beef, kraut and shredded swiss cheese. Then you dip them in Thousand Island dressing…..MMMMMMMMMM!
That was one crazy super bowl game. Giants deserve their glory from such an awesome play.
